Nourishing Chinese Soups: Hearty Soups to Serve the Family Some Warmth & Love by Mills Molly

1 pc onion, sliced into wedges

3 cloves garlic, finely chopped

½ tsp turmeric

2 tsp Sichuan peppercorns

2 tsp cumin seeds

1 pc cinnamon stick

2 pcs star anise

2 tbsp Chinese cooking wine

1 tsp sesame oil

2 tsp olive oil

1/3 cup soy sauce

1 tbsp brown sugar

Instructions:

Toss in turmeric, peppercorns, and cumin in a pan over medium fire and stir for about 2 minutes. Transfer to a mortar and pound or you may also place the mixture in a food processor and pulse until just crushed. Set aside.

Meanwhile, heat oil in a slow cooker set on “browning” and add lamb meat until brown on all sides. Remove to a plate.

In the same slow cooker, sauté the onions, ginger, garlic, cinnamon, and star anise.

Gently place the lamb meat on top and toss until the meat is rubbed with the spices.

Meanwhile, stir together cooking wine, soy sauce, sesame oil, and brown sugar in a small bowl. Pour mixture onto the meat together with a cup of water.

Set the slow cooker on low for about 8 hours or until the meat falls off the bone.

Transfer meat to a chopping board and shred with two forks. Discard the bone.

Back to the slow cooker, add the noodles and bok choy leaves. Continue to cooking on low for about half an hour.

Add shredded meat to the slow cooker and stir. Cook for a few more minutes or until the meat is heated through.

Serve in bowls with toasted sesame seeds on top.
